Ju'ne Easy Steamed Rice with Mixed Vegetable Topping
Steamed rice is a staple food in the Southeast Asian region. With a rice cooker, it is even much easier to prepare. Here's a version that would provide a healthier choice.
Ingredients:
- 3 cups rice (white or brown)
- 3 1/2 cups water
- 2 cups of fresh or frozen mixed vegetables of your choice
To prepare:
Wash and drain rice in a rice cooker. Add 3 1/2 cups water. Add 2 cups of frozen or fresh mixed vegetables of your choice. Set the rice cooker to cook. Unplug rice cooker when the warm button is lighted.
Serves 3 - 4. Enjoy!

Fried rice may or may not use freshly steamed rice. This preparation also works well with rice leftovers. It is easy to make and goes well as a main dish or as a side with almost any meat or vegetable dish.
Ingredients:
- 2 cups steamed rice with mixed vegetables (vegetables may also be steamed separately
- 3 tbsp butter, margarine or canola oil for pan frying
- 1 regular sized egg, scrambled
- 1 tbsp butter, margarine or canola oil for scrambled egg
- a pinch of sale to taste
- a pinch of garlic powder
- a dash of soy seasoning (optional)
To prepare:
Melt 1 tbsp of butter, margarine or canola oil in a small frying pan. Scramble one regular size egg in pan for 2 minutes. Set aside.
Melt 3 tbsp of butter, margarine or canola oil in a regular sized frying pan. Add 2 cups of steamed or left-over rice with mixed vegetables. Add a pinch of salt and garlic powder. Add soy seasoning (optional). Add scrambled egg. Stir fry rice for 5 minutes in high heat or until rice is somewhat browni.
Serve hot as main dish or as a side to other fish, meat or vegetable dishes. Serves 1-2. Enjoy!
