Ju'ne Easy Steamed Rice with Mixed Vegetable Topping

Steamed rice is a staple food in the Southeast Asian region. With a rice cooker, it is even much easier to prepare. Here's a version that would provide a healthier choice.

Ingredients:

  1. 3 cups rice (white or brown)
  2. 3 1/2 cups water
  3. 2 cups of fresh or frozen mixed vegetables of your choice

To prepare:

Wash and drain rice in a rice cooker. Add 3 1/2 cups water. Add 2 cups of frozen or fresh mixed vegetables of your choice. Set the rice cooker to cook. Unplug rice cooker when the warm button is lighted.

Serves 3 - 4. Enjoy!

Ju'ne Easy Fried Rice with Mixed Vegetable Topping

Fried rice may or may not use freshly steamed rice. This preparation also works well with rice leftovers. It is easy to make and goes well as a main dish or as a side with almost any meat or vegetable dish.

Ingredients:

  1. 2 cups steamed rice with mixed vegetables (vegetables may also be steamed separately
  2. 3 tbsp butter, margarine or canola oil for pan frying
  3. 1 regular sized egg, scrambled
  4. 1 tbsp butter, margarine or canola oil for scrambled egg
  5. a pinch of sale to taste
  6. a pinch of garlic powder
  7. a dash of soy seasoning (optional)

To prepare:

Melt 1 tbsp of butter, margarine or canola oil in a small frying pan. Scramble one regular size egg in pan for 2 minutes. Set aside.

Melt 3 tbsp of butter, margarine or canola oil in a regular sized frying pan. Add 2 cups of steamed or left-over rice with mixed vegetables. Add a pinch of salt and garlic powder. Add soy seasoning (optional). Add scrambled egg. Stir fry rice for 5 minutes in high heat or until rice is somewhat browni.

Serve hot as main dish or as a side to other fish, meat or vegetable dishes. Serves 1-2. Enjoy!
